Blueberry Crumble Squares



1  cup quick cooking oatmeal              1 ½ cups s-r flour

1 cup finely packed brown sugar         185g cup butter

1 egg                                                   1 teaspoon lemon juice

1.5 cups blueberry jam                                    1/4 cup coconut

1/4 cup chopped pecans or walnuts    sprinkle of Cinnamon on base.


Preheat oven to 350F (180C).

Lightly grease a 9” x 9” cake pan.

Combine the oatmeal, flour and sugar in food processor then add butter, add lemon and process again.

Spread 2/3 mixture into cake pan and press down.

Spread jam or blueberries over dry mixture.

Sprinkle the coconut and nuts over the jam.

Spread the remaining dry mixture over the top and press lightly.

Bake for 30-40 minutes, cut squares while still warm but allow to cool before removing from pan.

Can be served hot or cold with ice cream.

Drizzle of lemon icing when cool.



Remember this recipe is for squares only.  For rectangles there’s probably a different recipe.
